Mamie's Chocolate Chip Cookies

Becoming a mother was one of the most rewarding and challenging things I have had the opportunity to do.  I guess if I were to be truthful, I never felt adequate to live up to the name “Mom”.  This is largely in part to the woman I have called “Mama” my whole life.

Paulette, otherwise known as “Red”, is a human being like no other.  She exemplifies mothering at its best.

If you mention my mother’s name to any of my friends, the first word they will say is “cookies”. In college, my mom would send her famous Chocolate Chip Cookies through the mail, in a clear container.  Her reputation preceded her after a few deliveries.  So much so, that I would hear about the cookie delivery on campus before I had the chance to pick them up.  There would be a parade, of sorts, to the Campus Post Office.

What appeared to be a simple delivery of cookies was actually a personification of the woman responsible for the coveted care package.  Each cookie was scooped and baked with care and prayer.  Mom’s love for her three children to make each of them feel special and loved no matter the distance has been a driving force in my approach to parenthood. 

So spend some time in the kitchen, curl up with your favorite chick flick (Mom recommends American President or Pretty Woman) and toast a glass of milk to the one and only, RED.

Mamie’s Chocolate Chip Cookies

Ingredients 

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt 
  •  1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  •  1 teaspoon vanilla extract
  •  2 large eggs
  • 2 cups (12-oz. pkg.) 
  • 1 cup chopped nuts (optional)

Directions 

PREHEAT oven to 375° F.

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets. BAKE for 9 to 11 minutes or until golden brown
